When you walk through the doors of Terminus, located opposite Sierre train station (VS), it's hard not to think of the Didier de Courten era. Since his departure on April 21, 2023, however, the place has undergone a real transformation. After the reopening of the Osteria du Terminus in September 2023—which closed a year later—the restaurant is experiencing a new renaissance under the leadership of its new manager. Sébastien Bonvin, former director of the Ibis Styles in Sierre and an experienced hotelier with experience in Morocco and the United States, is now bringing his vision to life. The brasserie area has been enhanced with a few extra tables and a warmer atmosphere, with cushions on the benches, candles, and small plants on the tables.
The menu features timeless classics: marrow bones flambéed with apricot brandy, Icogne eggs with foie gras and yuzu mayonnaise, and a delicious onion soup poured at the table around a perfect egg. But chef Jorge Gonzalez, originally from Catalonia, also enjoys mixing traditional dishes—beef tongue with caper sauce, sauerkraut, beef bourguignon—with Catalan brasserie fare, such as chicken croquettes, Cap-i-pota, and grilled artichokes.
